So last night Jim and I made the best Mac and cheese ever - Well when I mean 'and I' I mean I sat and watched and gave some constructive criticism...
It's basically Mac and cheese but with a fun creative and highly fattening twist, the Latin name to this dish would be 'carb-orus central-ium'.
There's 2 versions to this as I have turned into one of those annoying vegetarians who demand you make a complete separate dish for 😂
K so the ingredients are:
Butter 1 tablespoon
Milk 500ml
CHEESE grated 250g(we used mature cheddar)
Flour 3 tablespoons
Macaroni 350g (or any kind of pasta really)
Garlic 2 Cloves finely chopped
Mustard powder 1 tablespoon
Couple slices of bread
2 packets of cheesy wotsits
(Optional, bacon & 1onion)
So you start with adding your milk in a saucepan along with the butter, mustard powder and flour, then adding the cheese gradually. (The weight is a rough guide but add until you think it's thick enough), cut up your first garlic clove really finely and plonk this in your sauce. Put your macaroni on with a little salt and bring that to the boil, all while stirring and keeping an eye on the cheese sauce.
If your having the bacon start cutting it into small chunks and the same with your onion, then when the pasta is nearly ready fry these.
Drain the pasta and pop it into an oven proof dish, then smothering it in the cheese sauce (adding the bacon and onions if you want them).
Now cut up a couple of slices of bread into crouton sized chunks (we used tiger bread for extra crunch) and fry them off in the frying pan with a drizzle of olive oil and adding the second clove of garlic cut up. When they are a little toasty sprinkle them over the top of your Mac and cheese dish.
Now the fun bit; get your packets of wotsits (depending on the size of your dish you may need more or less packets) and grab a handful and crunch it, sprinkle it all over the bread and covering it (try to get them in bigger chunks).
Finally add another sprinkled layer of grated cheese and then pop it in the oven for 20-25 minutes until it looks golden and crispy on top!
